I love my salads, and typically eat one a day—that may sound pretty boring, but I find its the best way to experiment with different foods and get in all those recommended veggies. Surprisingly, the most simple of combos sometimes turn out to be best and that is the case in this simple & clean, go-to salad recipe of mine below!
Chicken Chopped, Almond, Apple & Kale Salad
2-3 Handfuls of Kale
3 oz. Chopped Chicken Breast
1 Chopped Apple
2 Tbsp Chopped Almonds
Drizzle with Apple Cider Vinegar–or preferred dressing–Serve & Enjoy!
Optional additions: avocado, shrimp vs. chicken (or sweet potatoes makes a great vegetarian option), dried cranberries, more mixed veggies…my secret ingredient= Siracha (because it makes everything better) !
